After spending much of the evening making raspberry marshmallow hearts for Parker’s school Valentine’s Day party, I wasn’t feeling all that inspired for his lunch. So I just started grabbing things from the refrigerator.
I somehow ended up with a tub of hummus and a package of salami. I planned to put the hummus in a cup for dunking pretzels and just pile the salami in alongside it.
Then I had an idea. What if I spread hummus over one side of a salami slice, then folded it over like a sandwich?
In the interest of science, I felt it best to try one myself. And it wasn’t bad. Actually, it was quite good.
So I made a few of those and stacked those in (along with pretzels and the original dunking hummus).
The other main component of today’s lunch — an old fashioned PB&J. Because when you give you kid hummus and salami folds to eat for lunch, you really ought to also give him something the other kids at the table will at least recognize as food.
