First, the sleepless night.
For whatever reason, Parker couldn’t fall asleep last night. He tried. Long and hard. But he was awake until well after 11 p.m. His normal bedtime is 8 p.m. That’s a whole lot of lost sleep for everyone involved.
So this morning we both were feeling a little out of sorts.
Which brings me to the uninspired lunch. I’d had big plans. Maybe quiche. Maybe steamed pork buns. Possibly fried spring rolls.
But with little energy and even less time, none of that was happening.
Instead, I went with tried and true. A cold sausage wrapped in a cream cheese-slathered whole-wheat tortilla. Some berries. Some turkey jerky. Some pretzels. Good enough.
And now I’m looking forward to dinner tonight and tomorrow. For tonight, I’m making a milk-braised pork shoulder. I’ve never tried it before, but everything I’ve read sounds amazing. And think of the leftovers for Monday’s lunch!
But the big food event this weekend is tomorrow’s dinner.
Out of the blue, Parker decided he wanted to plan and prepare a “fancy” dinner. So I told him that if he wrote up the menu and shopping list, we could get what we need Saturday morning, then make it that evening.
Steak tacos with avocados
DIY ice cream sundae bar
A little heavy on the potatoes for my liking, but I wasn’t going to say anything. He’s very excited about this.
As for the winner of yesterday’s free lunch (box) giveaway… Congratulations to Sharon (I think Parker felt bad for the boys having to use Dora plates — heaven forbid). And don’t forget to play again next Thursday!
Hope everyone has a wonderful weekend!
