Because I really wanted to spend pretty much the entire weekend in bed feeling like blech.
And to wake up this morning feeling like I probably shouldn’t.
And for Parker to wake up roughly 45 minutes earlier than normal.
Sometimes I don’t mind him waking up a bit early. Make the morning rush a little less rushed. But today certainly is the sort of day when I’d have preferred a bit more sleep.
Either way, the combination of feeling lousy and having extra time made it a perfect morning to make one of Parker’s new favorites — brown sugar candied bacon. It is so easy and so hands-off.
All I do is set a wire rack over a rimmed baking sheet (line the baking sheet with foil for easy cleanup). I spritz the rack with cooking spray, then arrange slices of bacon in a single layer on that. Sprinkle the bacon with brown sugar, then bake for 15 or so minutes, or until the bacon is crisped and caramelized.
So that’s where I started for today’s lunch — a couple hunks of candied bacon. Add to that a cream cheese sandwich on whole-wheat chocolate chip pancakes (because it was easy), and a quad container of nibbles — blueberries, snap pea crisps, apple slices and some cucumber slices.
Good enough.
I know I promised my super roasted broccoli recipe that turned Parker into a broccoli lover… But the energy is low today. I promise tomorrow!

Just have to drop you a note and tell you how much I appreciate your creativity in putting together lunches…I am pregnant, and for the past two weeks, every time I look at your blog, I end up going out (or, more accurately, sending my husband out) to buy whatever ingredients/food I am lacking. Candied bacon and snap pea crisps for dinner tonight!
