I came up with the burrito idea while trying to figure out what to do with a few spare whole-wheat hot dog buns this morning. Which seems an unlikely path to a burrito, but it worked.
What I really wanted was to layer a bit of peanut butter and jelly down the center of a hot dog bun, then top it with a banana. I thought it would be kind of cool to have something that looked so much like a hot dog, but obviously wasn’t. I even considered putting the jam on top to simulate ketchup.
Problem was, I knew that banana would be a disgusting brown by the time Parker ate it. And I couldn’t think of a good way to prevent it. I considered giving the banana a brief lemon or orange juice bath before adding it to the bun. But I’m pretty sure it would have turned slimy by lunch.
In the end, I abandoned the idea and instead slapped another hunk of the Thai red curry BBQ chicken into the bun, then drizzle some brown sugar barbecue sauce over it.
But I did turn the banana into a burrito. This worked better than expected. I spread a thin layer of peanut butter over a large whole-wheat tortilla. I then sprinkled it lightly with cinnamon and sugar, then added a banana to one end.
As I rolled up the banana in the tortilla (folding in the ends as I went), I gently bent the banana so it was straight instead of curved. A little extra peanut butter at the end to seal it shut, and it was good.
And because the banana is completely wrapped (except for the cut ends), it shouldn’t turn brown (and if it does, as least Parker won’t know it!).
