Must resist… lure… of… Caesar salad

Easy lunch box ideas for kids

It’s hard not to jam his lunch with it every day. After all, getting Parker to embrace greens has been several years in the making.

But I do feel I am playing a bit of roulette with Parker’s tummy. The dressing I make calls for raw egg. Packing that in a lunch box — even with multiple ice packs — on a hot summer day just seems like a bad idea.

I don’t generally have a problem with giving him raw eggs… But when I know his lunch will sit around on a 90-degree day… Not even I’m brave enough to do that very often.

And I’ve decided not to embrace bottled dressing. Seems like a slippery slope. I want him to dig the real deal.

So today I ended up with more leftover barbecue chicken, this time slapped into a whole-wheat tortilla with a bit of cheddar, then briefly toasted. Add tons of fruit and a yogurt, and I’d say that’s good enough to get him through another day of summer camp.

Dinner tonight? Caesar salad, of course.

I’m with you on the salad dressing. I’m waiting for the day my daughter walk down the grocery aisle and yells “You mean this comes in a bottle?!”

Ha! When that day comes, I suspect we are doomed! Think of all the other things they will figure out…
