It’s hard not to jam his lunch with it every day. After all, getting Parker to embrace greens has been several years in the making.
But I do feel I am playing a bit of roulette with Parker’s tummy. The dressing I make calls for raw egg. Packing that in a lunch box — even with multiple ice packs — on a hot summer day just seems like a bad idea.
I don’t generally have a problem with giving him raw eggs… But when I know his lunch will sit around on a 90-degree day… Not even I’m brave enough to do that very often.
And I’ve decided not to embrace bottled dressing. Seems like a slippery slope. I want him to dig the real deal.
So today I ended up with more leftover barbecue chicken, this time slapped into a whole-wheat tortilla with a bit of cheddar, then briefly toasted. Add tons of fruit and a yogurt, and I’d say that’s good enough to get him through another day of summer camp.
Dinner tonight? Caesar salad, of course.
